I’m a big foodie and even though I wouldn’t consider myself a master chef, I do take pride in nourishing my body by preparing yummy food. I don’t eat to simply sustain my body, I like to prepare simple meals that make eating a pleasure. Every day is different, but I do have some staple recipes that I constantly include in my diet.

A while back I realized that when I would eat meat, I would get terrible tummy aches. I decided to become a vegetarian and it felt great, but after 4 years I began to include fish in my diet. I have found this to be the perfect balance for me. I believe that finding the correct diet requires you to be aware of how your body feels and reacts to certain foods. I’m not a dietitian or nutritionist; I’m just sharing the recipes I love and work for my body. With that disclaimer out of the way, here’s a typical "what I eat in a day":Â

Breakfast: I typically wake up around 7 am. First thing I do when I wake up is prepare myself a smoothie. I call this one the LUCKY LEPRECHAUN!
- Papaya
- Pineapple
- 1 açaà bar
- A chunk of ginger (washed)
- 1 lemon (squeezed)
- Greens: I like to use Greens Organics Superfood Powder
It ends up tasting like a tropical vacation that I never want to leave. I like to work out in the morning, and this is the perfect breakfast for a morning boost. It fills me up and gives me all the energy I need to start the day.
Lunch: My lunch usually ends up looking like breakfast because I always add eggs. It’s an easy-to-make protein that I can add to anything. My all time favorite is AVO TOAST.
- Sliced Bread: I believe that a yummy wholesome loaf is the secret to delicious avocado toast, so make sure to grab your favorite bread.
- Organic Cream Cheese
- EggsÂ
- Avocado Slices
- Red Pepper Flakes
Mia tip: Get yourself a tiny pan and you will be able to make perfectly round fried eggs. If preparing cute looking plates is your thing, this might change your life.
Dinner: I have to say that my SESAME SEARED TERIYAKI FISH TACO is one of the yummiest fish tacos that you will ever try. I will never get tired of this dish! It’s so easy to prepare and oh so scrumptious... ahhh pure perfection!

Fish ( I like to use snapper or flounder)
- Everything Bagel Seasoning
- Cornstarch
- Salt
- Onion Powder
- Garlic Powder
- Teriyaki Sauce

Once it’s seasoned I fry it in grape seed oil, by far the best oil to use if you are going to fry something.

Coleslaw
- Chopped Cabbage
- Mayonnaise
- Cilantro
- 1/2 Lemon (squeezed)

I heat up my favorite corn tortilla, melt a slice of cheese (I like Munster) and lay the fish. To finish, I top it off with the slaw, avocado and some Cholula.
